Chicken Orzo Salad

150g (200g) Skinless Boneless Chicken Breast, per person

8-9 dates, chopped

2 mandarins, separated into segments

3 carrots, sliced lengthways then chopped

1 Large Tomato

1/2 cucumber

3 celery stalks

1/2 lettuce shredded

100g Feta

2 tablespoons Eta Lite mayo

200g Orzo

Cook the chicken in a pan with a little olive oil. Put the orzo into salted boiling water, stir occasionally, cook for 12-15 mins. Put into a callender and run cold water through it.

Assemble the salad and mayo in a large bowl. Add the chicken and orzo serve.
