Serves 4.
500g prime mince 1 cup mozzarella, shredded
1 onion, finely chopped 1 teaspoon paprika (optional)
1 teaspoon chunky garlic paste 3/4 cup extra lite philadelphia
1 teaspoon ground cumin Coriander leaves to garnish
1/4 teaspoon chilli powder
400g tin chopped tomatoes
1/2 cup tomatoes
410g kidney beans
8 Mountain bread
Brown the mince in a non-stick pan over a medium heat. Add the onion,garlic, cumin and chilli powder and cook stirring untuil the onion softens. Stir in the tomatoes, water and beans and simmer, uncovered, for 15 minutes or until the mixture thickens. Remove from the heat and season to taste. Pre heat the oven to 200C.
Divide the mixture and fill the mountain breads. Wrap and secure with a toothpick. Place on a baking tray covered with baking paper and sprinkle with cheese and paprika. Bake for about 10 minutes or until heated through and serve topped with philly and coriander.
