Rhubarb Crumble.

Rhubarb Crumble
Serves 10-12. 155cals per serve. 4g fat. 2g sat fat. 27g carb 16g sugar.
10 stalks rhubarb, trimmed and washed, and cut into 4cm pieces.
Zero Sprite
1 Sachet Weight Watchers Raspberry Jelly
1 cup plain flour
1 cup rolled oats
1/2 cup White sugar
1 teaspoon baking powder
1/2 cup Brown sugar
50g Butter, melted
Put the rhubarb into a pan and cover with the Zero sprite. Bring to a slow boil and poach until the rhubarb is soft. Pour off the excess fluid. Meanwhile mix the dry ingredients in a bowl. Add the butter and mix well. Mix the weight watcher's jelly crystals into the rhubarb and put into an ovenproof dish.Put the crumble on top and bake until crisp and golden. Serve with lite custard or greek yoghurt.
