Rice Bran Oil Spray
2 large onions, peeled and finely diced
1 Tablespoon Chunky Garlic (gourmet herbs tube)
1kg of Prime or Premium Mince
2x 400g tins of chopped tomatoes ( I used tinned cherry tomatoes)
4 tablespoon of Tomato Paste
1 teaspoon of powdered Beef Stock
3 tablespoons of Bisto Beef Gravy Powder
1 cup of Water
2 cups of frozen Peas, Beans, Carrots and Corn Mix
Spray a large pan with oil. Heat on high and add the mince, onions and garlic. Break up lumps with a wooden spoon and stir to prevent sticking. When browned add the tomatoes, tomato paste, beef stock powder dissolved in the water, and Bisto. Turn down the heat, cover and simmer for 25 minutes, stirring occasionally. Add the frozen vegetables stir and cook for another 5-10 minutes. Serve half of the mixture with extra steamed veggies or a salad for you and Taco’s, Nachos, Rice, Pasta or Mash for the rest of the family with the other half do this;
Rice bran Oil Spray
2 Eggplant, ends removed sliced lengthways, aim for 6 slices per eggplant
1 250g tub extra light ricotta
2 egg Whites
1 cup of shredded Mozzarella
Seasoning to taste
Pre heat oven to 200c
Spray a large, shallow casserole dish with rice bran spray. Line the bottom with one layer of eggplant.
Blend the ricotta with the egg whites and a tablespoon of parmesan. Season to taste.
Layer the eggplant and remaining mince mixture.
Top with the ricotta mixture and sprinkle with the mozzarella and another tablespoon of the parmesan.
Bake for 40 minutes or until the eggplant is cooked and the top is browned. Serve with a large Salad.
Both meals serve 4.
