Frittata- Dinner and lunch for under $20!

Serves 8 (adapted from Next magazine)

500g Harmony farms lamb and rosemary sausages

2 Large Kumara, chopped

6 Large Eggs

1/2 cup trim milk

1/2 container Philedelphia extra lite cream cheese

1/2 cup lite mozzarella

salt and black pepper


Pre heat oven to 180c

1) Put sausages in pan of cold water and bring to the boil. Allow to simmer for 5 minutes then remove from the heat.

2) Cook kumara for 5 minutes in boiling water.

3) Beat the eggs, milk and Philly with a fork break down any large lumps of Philly. Stir in the cheese. Season with salt and pepper. Drain and chop the sauages into chunks and add to the mixture with the drained kumara. Mix gently then put into a large greased dish.

Bake for 40 minutes or until set in the middle. Serve with a large salad.
